Steak and Herb Salad

Sunday night, for me, consists of dinner for two usually at home. D and I have enjoyed spending time together grilling or cooking on Sunday nights and it is a lot better than going out to dinner. Last night we tried the steak and herb salad from Bon Appetit Magazine. It was a perfect summer salad and actually very filling too. You can find the recipe by clicking here.

1. one shallot finely chopped for red wine vinaigrette dressing

3. grill corn and eggplant until tender and let cool to room temperature

Once the eggplant and corn cool off, grill the skirt steak and then let it cool for a bit too. We placed the eggplant across the salad plate and mixed the corn (off the cob) and arugula with vinaigrette which was then placed on top of the egg plant. We added the skirt steak around the salad to finish.

Voila, you have a delicious summer salad that is quite tasty too!
